Do you like easy and flavorful breakfast? In this post, I am going to share how to make breakfast tacos. The filling can be prepared in advance and heat it up in the morning. Read on and I will show how you can easily make it at home.
Mexican food is one of my favorites. I especially like their flavorful breakfast. I am not a fan of cereal or any sweet breakfast. I’d prefer savory over sweet. Growing up in the Philippines, all our breakfast is savory (except for bread.) When I came here to the US, I was not used to eating cereal, pancakes, or oatmeal in the morning.
When we went to Italy a few years ago, I was surprised to find out what they eat for breakfast. Their breakfast includes lots of cheeses, (of course, lol) meats, pastries, and lots of Nutella ๐ It’s very different from American breakfast. I liked it on the first day or two until I got tired of eating too much processed meat. LOL.
I’ve been looking for good savory recipes for breakfast. I tried different recipes and was not impressed. I thought it lacked flavor. Then I had an epiphany, what if I use chorizo as the filling? I tried making chorizo from scratch and added red bell pepper and eggs. For the filling, I used sour cream, avocado, and cilantro.
It was delicious! Hubby and I loved it and it is now our favorite breakfast. I make this recipe once or twice a week.
Where can I buy chorizo?
You can buy chorizo in many grocery stores. Walmart sells them but sometimes it’s not available. Store-bought chorizo is Mexican chorizo and it can be spicy.
Can you make chorizo at home?
Yes. It is super easy to make. For this recipe, I recommend homemade chorizo because Mexican chorizo tastes different than Filipino-style chorizo.
Can I make this recipe in advance?
Yes. It can last up to 3 days in the fridge. I normally make enough for two meals to save time.
Chorizo Recipe (Filipino-style)
Ingredients
- 1.5 pounds ground pork
- 8 Tbsp. brown sugar
- 3 tsp minced garlic
- 1 1/2 Tbsp. paprika
- 2 Tbsp. vegetable oil
- 1 tsp. salt
- 1/2 tsp. pepper
Instructions
- In a large mixing bowl put the ground pork and mix all the ingredients.
2. Take a handful (about a cup) of the mixture and put it in Ziploc bag and store in the freezer for up to 12 months.
3. If you are ready to make it for breakfast, just take out one of the Ziploc bags and place it in a bowl with cold water. It should thaw in about 30 minutes.
Breakfast Taco with Chorizo Recipe
Ingredients
- 1 cup or 8. oz chorizo, thawed or casing removed (if store-bought)
- 1/2 red bell pepper, cubed
- 2 eggs, beaten
- 3-4 soft flour tortillas for tacos
- vegetable oil
For Toppings
- sour cream
- avocado
- cilantro
Instructions
- Place the chorizo in the pan over medium heat. Cook and stir chorizo, breaking it up as it cooks until the chorizo is browned and crumbly. Transfer the cooked chorizo to the plate and set aside.
2. Add 2 Tbsp of oil into the pan. Saute the red pepper until soft. Transfer to the plate with the cooked chorizo.
3. Pour beaten eggs into the pan. Cook and stir until the eggs are set.
4. Add the chorizo and red bell pepper to the pan. Heat it up for about 2-3 minutes. Take off the heat.
5. In a clean pan, heat up flour tortillas until soft. It will take about 1-2 minutes per side.
6. To build the tacos, place chorizo filling in each tortilla. Add sour cream, avocado, and cilantro.
