Cooking is one of the things I grew to love. I never liked cooking when I was young. Mainly because my mom doesn’t have recipes written to. Oftentimes, she gets upset when I don’t do it correctly so I never enjoyed it. Mom was the main cook in the family. When my mom is not around my sister usually did the cooking.
When I got married and moved here to the US, I had to learn how to cook. I remember watching cooking videos and learned how to cook pretty quickly. It was not difficult as I had expected and I grew to love cooking.
When we have kids I did not have much time to cook. I am mostly tired around dinner time. I quickly learned to make recipes that are easy and delicious.
Thai food is hubby’s favorite food. Thai food is not very cheap where we live. In order to save money, I make it at home. We eat Thai food once or twice a week. Most of the recipes I make are not very difficult and time-consuming.
Prik Khing is my favorite Thai go-to recipe. We like to go to the Asian store and look for different kinds of sauce or curries to try at home.
What is Prik Khing?
Prik Khing is a Thai curry that is made from dried chili, garlic, shallots, lemongrass, galangal, and other spices. You can also make Prik Khing from scratch but I think the store-bought paste tasted pretty good.
Most Thai curry recipes use coconut milk however, this recipe does not. This recipe is spicy. If you like curries, I’m sure you’ll enjoy this recipe.

Thai Prik Khing Chicken Recipe
Ingredients
- 3-tbsp. peanut or vegetable oil
- 1-4 oz.can Prik Khing curry paste
- 1-chicken breast, (thinly sliced)
- 2-3 cups green beans or string beans, (chopped about 3 inches long)
- 2-3 tbsp. sugar
- 1-tsp. fish sauce
- kaffir lime leaves (optional)
- water
Instructions
- Slice the chicken breast thinly. I like to slice the meat diagonally.
2. Take the pan and put in the oil.
3. When the oil gets hot, add a can of Prik Khing paste. Saute for about 1-2 minutes until the paste turns darker in color.
4. Add chicken to the pan until cooked and well coated.
5. Add 1/4 cup of water and let it simmer.
6. Take the green beans and add them to the pan.
7. Add 1/2 cup of water to the pan. Simmer.
8. Then add fish sauce, sugar, and kaffir leaves (if using).
9. Simmer until the green beans are soft.
10. Turn off the stove and serve over rice.
