This is a super easy, make-ahead ground beef recipe. It’s perfect for busy moms because the meat filling can be made a day ahead. Kids will love the cheesy meat filling with flaky crescent roll crust.
The first time I had beef broccoli wellington was at my mother-in-law’s. We used to have dinner at her house every Sunday. She introduced this recipe to me and it’s now one of my go-to recipes.
I liked this recipe immediately. I mean what’s not to love? The filling is made with ground beef, onions, sour cream, and cheese. If you don’t like sour cream then you might not like it, lol.
A lady in our small group asked us to make this for dinner. She doesn’t even like sour cream. I honestly don’t think she realized that there’s sour cream in the filling 🙂
What kind of broccoli should I use?
I used a bag of frozen broccoli florets. Don’t buy the broccoli cuts because it’s mostly stems and not much florets. You can also use fresh broccoli if you prefer. Make sure to cook it first before adding it to the filling.
Beef Broccoli Wellington Crescent Roll Recipe
Ingredients
- 1 lb. ground beef
- ½ onion, chopped
- 8 oz. cheddar cheese, shredded
- 1/2 cup sour cream
- 9 oz. broccoli florets, I used frozen
- 2 8 oz. tubes crescent rolls
- salt and pepper to taste
Instructions
- Cook and prepare frozen broccoli according to package. Drain and set aside.
- Preheat oven to 375 degrees F.
- In a large skillet, cook ground beef and onions until soft and meat is no longer pink. Drain off fat.
- Add broccoli, sour cream and cheddar cheese with the meat. Mix well.
- Add cheese, salt and pepper and let the cheddar cheese melt.
- Turn off the stove and let the meat filling cool.
- Using a 12×18 baking sheets, unroll one crescent dough. Press the perforations to seal.
- Spoon the meat filling over the crescent roll. Spread it out evenly.
- Take the remaining crescent dough and roll it over the meat mixture.
- Pinch edges together to seal and prevent the filling to come out.
- Bake for 18-22 minutes or until golden brown.
