Tilapia with Sweet Pecan Sauce

I love fish. I know many people that aren’t a fan.  My husband did not use to like fish but now he loves it.

Growing up in the Philippines, we ate lots of fish and vegetables because they’re inexpensive. My dad worked for a fishing company so we ate fresh fish all the time.

When my parents came to visit us last year for the first time, we introduced them to all our foods.  After a while they were craving fish, but it’s not cheap here in PA. Luckily, my dad caught several chubs in our backyard creek so they got their fish after all.  LOL.

This recipe is one of my favorite fish recipes. When I think of good fish recipes, this one always comes to mind.

 

Ingredients:                                                                                             Serves: 4

  • 4 pieces tilapia fillets or any white fish you prefer
  • 1/2 cup flour
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • Oil for frying

For the brown sugar sauce:

  • 6 tablespoons butter, unsalted
  • 4 tablespoons brown sugar
  • 1 red bell pepper
  • ¼ cup pecan halves

Directions:

  1. Put flour in a bowl then mix in a pinch of salt and pepper. Dredge the fish in the flour mixture, then eggs and coat it in Panko breadcrumbs.  The flour/egg acts as a paste so the Panko will stick to the fish.
  2. Heat oil in a frying pan and fry the fish until golden brown.
  3. In another pan, melt butter and then add brown sugar and let it dissolve. Add in bell pepper and cook for a few minutes.  Then add the pecans and simmer for a few minutes.
  4. Pour the sauce over your plated fish.

This goes well with mashed potatoes, couscous, or flavored rice. Enjoy!
